Job description: 

We invite applications for a 18 months Post-Doc position in the field of lipidomic applied to Food Science and Nutrition at the laboratory Biopolymers Interactions and Assemblages (France) within the French National Institute for Agricultural Research (INRA).

This Post-Doc project is entitled “Identification and quantification of molecular species of lipids and their metabolites during in vitro digestion of food by lipidomic”. The aim of this proposal is to develop a lipidomic approach allowing the identification and quantification of lipids of nutritional interest taking into account the variety of sources, their fate during in vitro digestion as well as their oxidative stability.
It will consist in the:
• Identity and quantify the molecular species of marine and alternative sources of n-3 fatty acids as well as their metabolites (MAG, FFA) released during in vitro digestion. This will provide quantitative and qualitative data related to the bioacessibility of fatty acids as function of the sources.
• Identity and quantify the oxidized species as polyunsaturated fatty acids are prone to oxidation in food but also during digestion. Their oxidation products can be absorbed by intestine and impaired the beneficial effects of the original nutrients.
• A pre request will consist to develop chromatographic methods (HPLC, HPTLC) to analyse and separate the mentioned molecular species prior to mass spectrometry.

The project will include a strong cooperation with LABERCA (ONIRIS), a French laboratory renowned for its expertise in the field of mass spectrometry and metabolomics.

Duration: 18 months, starting as soon as possible
Net salary: ~ 1900-2100 €/month depending on professional experience

Required Knowledge: 

We seek candidates with a PhD in analytical chemistry/mass spectrometry/lipid analysis, if possible with basic knowledge about food, digestion and nutrition.
Applicants should be fluent in speaking and writing English. Basic knowledge of French would be appreciated
