This project provides an excellent opportunity for a Meat Research Officer to expand their knowledge and skill base through research of strategic importance to the Irish meatindustry The objective of the project is todetermine the best on-line method/s to predict the saleable yield and other commercially important criteria of eef and lamb carcasses. This will involve reviewing the literature and recent developments worldwide, selecting the most promising technologies and carrying out in-factory trials of one or more of these and the existing VIA grading systems installed in Irish factories.Recommendations will then be made to the Irish meat processors.
